MUSHROOM BAHJI


The speediest mushroom bhaji you ever did see, fast food without the guilt. This was a fridge raid that turned into something pretty banging, I had some sad looking mushrooms lurking in the bottom of the fridge and 20 mins away from my desk (that working from home life), yes that's all the time you need! . Serve with yogurt and roti.

ingredients

Punnet of shrooms slices

1/2 onion finely chopped

Thumb peice ginger

2 cloves garlic chopped

1 tsp mustard seeds

1tsp cumin

1tsp coriander

1/2tsp tumeric

1/2tsp garamasala

1/2tsp chili powder

Handful cashews

1tbsp ghee or butter

1tbsp tomatoe paste

Water to looser around 1/2 cup

1tsp tamarind plus more for serving

Yogurt

Fresh coriander

Roti


instructions


In a large dry pan, toast cashews for a few min set aside.


Melt the ghee in a pan, add mustard seeds when they start to pop add in the onions to fry off until they start to brown, then add in your garlic, ginger and remaining spices for a few min. Add in the sliced mushrooms fry until they have softened slightly, then add in the toasted cashews, tomato paste and water to loosen.

Cook down for 5 min before finish with the tamarind.


Serve with yogurt, more tamarind, fresh coriander and warm roti.
