A few years back I tried the keto/banting diet (low carb- high fat) and loved experimenting with ways to reduce my carb intake without feeling disappointed. I came up with this dish to replace my quesadilla cravings, a super thin omelette used in the same way you would a tortilla to encase spiced fried beans and plenty of cheese. I top mine with avocado and spring onion but sour cream and salsa wouldn’t go a miss!
LOW CARB FRIED BEANS QUESADILLA
Ingredients
1/2 can kidney beans drained
1 tsp garlic olive oil
1/2 tsp chilli flakes
1/2 tsp cumin seeds
1/2 tsp coriander powder
3/4 tsp cumin powder
1/2 tsp smoked paprika
1/2 tsp chilli powder
salt and pepper
1 spring onions sliced
1 tsp butter
2 eggs whisked
1/2 cup cheddar grated
1/2 avocado sliced
Sour cream and Salsa optional
Instructions
In a pan on a medium heat warm the spices in the oil then add in the beans and the white part of the spring onion, fry for 5 min until the beans burst open and crisp a little. Season with salt and pepper.
In a large pan on a medium heat melt the butter, add in the beaten eggs swirling around to coat the bottom of the pan as you want it to be thin like a crepe. After a few min flip to cook the otherside, as the other side cooks add the fried beans to one half of the omlette top with the cheese and fold the omelette over pressing down to close. Allow the cheese to melt inside before transfering to a plate.
Top with sliced avocado and the green spring onion. Optional sour cream and salsa would be a great addition!
