When i’m craving Roti King this is the closest thing I can get to their morning glory. Rustled up in under 20 mins, if you have premade crispy shallots this would be even speedier but i’ve included making your own in this recipe. Grab yourself some microwavable brown rice to complete this stinker of a meal.

Ingredients
1tbsp soy sauce
1/2 tsp fish sauce
1 1/2tbsp oyster sauce
1tsp sugar or honey
200g morning glory (asian spinach)
150g tender stem broccoli cut into batons
Few large handfuls of chopped cavolo nero
1tbsp chopped garlic
1-2 red chillis sliced
2 eggs
Microwavable brown rice
Coriander to garnish
Crispy shallots:
150g shallots peeled and thinly sliced
Veg oil
INSTRUCTIONS
Shallow fry the thinly sliced shallots for around 10 min until golden brown, keep moving them around the pan for an even cook. Remove with a slotted spoon and drain on some kitchen towel they will crisp up even more as they cool; set aside and reserve oil for frying the eggs.
Meanwhile in a large pan or wok on high, add a tbsp of the oil from the shallots to stir fry the broccoli for a few min until tender then add in the garlic and chilli fry for a min before pouring in the sauces and sugar/honey cook off for a min before adding in the other greens. Loosen with water a tbsp as a time if needed.
Microwave your rice whilst you fry your eggs in the reserved shallot oil until crispy but runny in the centre.
Pile the greens on top of the rice, finish with your fried egg, crispy shallots and coriander.
