SPEEDY VEGGIE TART

This is basically a cheats pizza, no faffing around making the dough just grab yourself some pre-rolled puff pastry, red pesto, cheese, veggies and your done in 20 minutes. Minimal effort needed for this one, a perfect speedy tea for those who don’t want to spend hours in the kitchen.

To make mine more pizza-esque I cut the pastry into a circle and used the trimmings for jam tarts, but you can skip this and just use the rectangular pre role as is, score in a border and use the same method as below.

Serve with salad for an all ground crowd pleaser!


SPEEDY VEGGIE PUFF PASTRY TART

Total Time20 mins

Ingredients

  1. 1 sheet pre rolled puff pastry

  2. 3/4 cup shredded mozzarella

  3. 1 1/2 tbsp red pesto

  4. 1/4 courgette thinly sliced

  5. 1 handful tenderstem broccoli and asparagus

  6. Garlic olive oil Use regular if you don't have

  7. Parmesan

  8. Salt and Pepper

Instructions


Preheat the oven to 220C.


Using a plate as a guide cut out a round piece from the pastry sheet. Save the trimmings for jam tarts or roll out for another tart.


Using a knife gently score a border around the pastry, this will puff up in the oven to form the crust.


Spread the pesto evenly on the pastry within the borders.


Scatter with moz and layer the veggies. Add a little more moz and some shavings of parmesan.


Season and drizzle with olive oil before baking in the oven for 15 min or until golden brown.
