SALT AND PEPPER HONEY CHICKEN

The easiest comforting 30 minute meal. You can find the equivalent in most takeaways but for triple the calorie intake and loaded with E numbers. Don’t get me wrong I love a greasy chinese takeout but why bother when you can make it so quickly at home and not feel so bad about eating it!


SALT AND PEPPER HONEY CHICKEN

Servings: 4 people

Ingredients

  1. 1 Thumb size Ginger thinly sliced into batons

  2. 400 grams Chicken Breast chopped into chunks

  3. 4 Garlic cloves chopped

  4. 1/4 Cup Dark soy sauce

  5. 3 Tbsp Honey

  6. 1 Red bell pepper chopped into chunks

  7. 1/2 Onion Chopped into chunks

  8. 5 Spring onion thinly slice the white and roughly chop the green part

  9. 1/2 Cup Water

  10. 1 tsp Corn flour To mix in the water

  11. 1 Tsp ground black pepper

  12. Salt

  13. 1 tsp Chilli flakes

  14. 1 Tbsp Seasame oil

Rice

  1. 1 Cup White rice

  2. 1 Cup Green beans Chopped

  3. 2 Eggs Whisked

  4. Handful Chives chopped

  5. Handful Spring onion Chopped

  6. 1 Tbsp Butter

  7. 1 1/2 Tbsp Dark soy sauce

Tenderstem broccoli

  1. 400 grams Tenderstem broccoli

  2. 1 Tsp Oil oil

  3. Salt And Pepper

Instructions


Preheat the oven to 180C


In a microwavable bowl add one cup of washed rice to 1 cup water with a pinch of salt, cover with a plate and microwave for 9 min, let it stand with the plate on for a few minutes (this will steam it further) then with a fork break the rice up and set aside for later.


For the tenderstem: Scatter the broccoli on a baking tray, spray with a little olive oil and season. Roast for 10 min or until chard on the edges. 


In a pan on a medium/high heat fry off the garlic, ginger, black pepper and chilli flakes in sesame oil for a few min. Then add in the chopped chicken fry until browned for around 5 min then chuck in the chopped pepper and onion for a further 3min. Pour in the soy sauce, honey, water with the corn flour (this will thicken the sauce slightly) let it bubble away for 5 min until glossy. At the last min chuck in the spring onion and season to taste.


For the rice: In a large pan on high heat melt the butter and scramble the eggs, chuck in the chopped green beans along with the cooked rice, stir fry for a few min. Finally add in the chopped spring onion, chives and soy sauce stir fry for a few min.


Serve the stir fry rice with the salt and pepper honey chicken and roasted tenderstem.
