A rustic side dish or tasty lunch, this salty/sweet baked feta is the perfect accompaniment to crusty bread. Serves 2 but devouring it solo is easily done.

1 block Feta cheese
1-2 handfuls Tomatoes (As many as you want)
1/2 tsp Dried mint
1 tsp Oregano (fresh or dried)
1 tsp Honey
Salt and Pepper
Extra virgin olive oil
Preheat the oven to 190ºC
Combine the feta, tomatoes, herbs, honey and a splash of oil in a baking dish.
Season with salt and pepper, then bake for 25 minutes, or until the feta is bubbling and golden and the tomatoes have burst.
Finish the dish off with a little more extra virgin olive oil and serve with a crusty baguette.
